We eat a lot of salads in the spring and summer. They make good use of seasonal veggies and can be very versatile. They also require little-to-no cooking and cleanup is snap!
Dinner tonight was a hit. It was pretty simple, but if you are looking for something different to add to the menu this Strawberry Salad would be it!
Strawberry Salad with Chicken & Feta
For each serving:
2 C Spring Mix or Spinach
5-6 Sugar Snap Peas, cut into 1/2″ pieces
2 Tbsp Almond slices
1/3 C Roasted Chicken breast, diced
2-3 Tbsp Crumbled Feta Cheese
Poppyseed or Balsamic Vinaigrette Dressing
Layer all ingredients in bowl. Toss with dressing. Eat!
If you wanted to make this a side dish, you could leave out the chicken and it would still taste good. With the chicken it makes a complete meal for us!
